Ingredients

1 tbsp all-purpose flour
1.5 tsp rubbed sage
1 tsp dried minced garlic
1 tsp dried thyme leaves
1 tsp salt
0.5 tsp ground allspice
0.5 tsp ground paprika
4 (5 oz) boneless pork chops, about 1 inch thick
2 tbsp olive oil
1 medium sweet onion, thinly sliced
2 medium Red Delicious apples, cored and thinly sliced
0.5 cup apple juice
1.5 tbsp brown sugar

In a small bowl, whisk together flour, sage, garlic, thyme, salt, allspice, and paprika. Reserve 2/3 of this spice mixture; coat the remaining 1/3 onto pork chops on all sides.

Heat olive oil in a large skillet over medium-high heat. Sear chops until they're golden brown, about 3 to 5 minutes per side, then transfer them to a plate.

Add sliced onion to the same skillet and cook until it softens, about 3 minutes. Add apple slices; cook for another 2 minutes. Stir in apple juice, brown sugar, and reserved spice mixture, bringing the mixture to a boil.

Lower heat, cover the skillet, and let everything simmer together for about 5 minutes. This will ensure that the chops reach an internal temperature of 63°C (145°F) by using an instant-read thermometer.
