Ingredients

1 lb skinless, boneless chicken thighs, cut into chunks
1 lemon
1 orange
1 lime
1/2 cup minced garlic
2 tbsp adobo seasoning
1 tsp onion powder
1 tsp ground black pepper
1 tsp ground coriander
3 (0.18 oz) packets Sazon with coriander and achiote
1 quart oil for frying
3 cups all-purpose flour

In a large bowl, combine the chicken, lemon juice and zest, orange juice and zest, lime juice and zest, minced garlic, adobo seasoning, onion powder, black pepper, coriander, and Sazon seasoning. Cover and marinate in the refrigerator for 4 hours.

In a separate large bowl, mix flour, cornstarch, a pinch of salt, and a pinch of black pepper. Shake off excess marinade from the chicken pieces and coat them evenly with flour.

Heat oil in a large pot over medium heat to about 300°F (150°C). Once hot, fry coated chicken pieces in small batches until golden brown and crunchy, for 5 to 10 minutes. Ensure the internal temperature reaches at least 165°F (74°C) with an instant-read thermometer.
