Ingredients

1 lb penne pasta
1 tbsp butter
3 chicken breasts
1 tsp Italian seasoning, divided
1/2 tsp salt, divided
1 shallot, minced
4 cloves garlic, minced
1/2 tsp crushed red pepper flakes
1 (28 oz) can tomato purée
1/2 cup heavy whipping cream
2 tbsp vodka
1/2 cup finely shredded Parmesan
4 leaves basil, julienned

In a large pot, bring salted water to a rolling boil. Add penne and cook until tender yet firm to the bite, about 11 minutes.

Meanwhile, in a deep cast iron skillet, melt butter over medium heat. Season chicken with 1/2 tsp Italian seasoning and 1/4 tsp salt.

Cook chicken in the skillet until no longer pink and juices run clear, about 5 mins per side. Let it rest before slicing into thin strips.

In the same skillet, cook shallot and garlic until fragrant. Add tomato purée, remaining Italian seasoning, remaining salt, and red pepper flakes. Bring to a simmer and stir in cream, vodka, and Parmesan until melted.

Combine chicken with sauce in the skillet. Drain pasta, reserving 1/2 cup pasta water. Add pasta to the skillet, tossing to combine. If needed, add pasta water 1 tablespoon at a time to adjust sauce consistency. Top with julienned basil.
