Ingredients

8 lasagna noodles
1 tbsp olive oil
2 large cloves garlic, minced
1 (10 oz) package frozen chopped spinach, thawed and drained
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 tsp salt
1 (14 oz) jar spaghetti sauce
0.25 cup grated Parmesan cheese

Preheat the oven to 350°F (175°C).

Bring a large pot of salted water to a boil. Cook lasagna noodles for about 8 minutes or until tender but firm, then drain and lay flat on a sheet of baking paper.

In a skillet, heat olive oil over medium-heat. Add minced garlic, cook until fragrant (about 2 mins), then transfer to a large mixing bowl.

Combine spinach, ricotta, mozzarella, and salt in the mixing bowl. Mix well.

Spread about 1/4 cup of the spinach mixture onto each lasagna noodle, roll up tightly, and arrange rolls seam-side down in a baking dish.

Pour marinara sauce over rolled lasagna noodles, ensuring they're fully covered.

Cover the dish with aluminum foil and bake for 30 minutes. Remove foil and continue to bake for another 5 minutes.
