Ingredients

1 tbsp peanut oil
1/4 cup finely chopped onion
6 hot dogs, sliced
3 cups cold cooked rice
1/2 tsp ground ginger
1/4 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp pepper
1 cup frozen mixed vegetables
2 Tbsp butter
2 eggs, beaten
2 tsp rice vinegar
1 tbsp soy sauce, plus more to taste if desired
1/4 cup mayonnaise
1 Tbsp sriracha
1 tsp lemon juice
3 green onions, thinly sliced

Heat oil in a large deep skillet or wok over high. Add onions and cook until lightly browned and softened, around 2 minutes.

Add hot dogs and cook, stirring constantly, until browned.

Mix in rice and cook, stirring constantly, for about 1 minute. Then add ginger, garlic, salt, and pepper.

Create a flat layer with the mixture and let it cook undisturbed until the rice is lightly toasted, around 2 minutes. Add mixed vegetables and stir, cooking undisturbed again for 2 more minutes.

Move rice mixture aside and make a space in the center of the skillet. Add butter and let it melt. Pour in eggs and cook while only stirring the eggs until softly scrambled.

Fold eggs into the rice mixture and combine well. Stir in vinegar and soy sauce, cooking for 1 more minute.

Combine mayo, sriracha, and lemon juice in a small bowl.
