Ingredients

1/2 small watermelon
5-6 fresh basil leaves
2 Tbsp pepitas (or nut of choice)
1/4 cup feta crumbles
Lemon balsamic glaze

Directions

Wash the watermelon with a fruit cleaner. Halve it and, with flesh down, slice thinly.

Using a paring knife, carefully remove the rind from each slice. Cut slices into triangles.

On a platter, arrange the watermelon triangles. Top with feta and pepitas. Drizzle lemon balsamic glaze over all. Garnish with fresh basil leaves.
