Ingredients

2 lbs ground beef
2.5 cups butter-flavored cracker crumbs
3/4 cup ketchup
1 small onion, chopped
1/4 cup brown sugar
2 eggs
2 slices bacon
2 tbsp vinegar
2 tbsp yellow mustard
3/4 tsp salt

Preheat the oven to 350°F (175°C).

In a large bowl, mix together the ground beef, cracker crumbs, 3/4 cup ketchup, onion, brown sugar, eggs until well combined. Press this mixture into a 9x5-inch loaf pan and lay the bacon slices over the top.

Bake for about 1 hour until cooked through. While the meatloaf bakes, prepare the glaze by whisking together 1 cup ketchup, remaining 1/2 cup brown sugar, vinegar, mustard, and salt in a bowl. After 45 minutes of baking, brush this glaze over the top of the meatloaf.

Continue baking for the last 15 minutes, allowing the glaze to caramelize and the meatloaf to fully cook.
