Ingredients

3 tbsp shredded Cheddar cheese
2 green onions, chopped
2 slices cooked bacon, crumbled
2 tbsp cream cheese, softened
2 tbsp frozen chopped spinach
2 tbsp finely chopped white mushrooms
0.25 tsp chopped garlic
1 pinch dried parsley
salt and ground black pepper to taste
1 pork tenderloin, butterflied and pounded flat
1 cup dry bread crumbs

Preheat the oven to 350°F (175°C). Grease a baking sheet.

In a bowl, mix together the Cheddar cheese, green onions, bacon, cream cheese, spinach, mushrooms, garlic, parsley, salt, and black pepper. Spread this mixture onto one side of the flattened tenderloin, then roll it up, resembling a jelly roll.

Coat the rolled tenderloin with bread crumbs and place it on the prepared baking sheet.

Bake the tenderloin in the preheated oven for about 1 ½ hours or until the pork is no longer pink inside. Use an instant-read thermometer to ensure it reaches at least 63°C (145°F) in the center.
