Ingredients

16 oz penne pasta
1 tbsp olive oil
1 lb ground beef
1 small onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tbsp paprika
2 tsp garlic powder
2 tsp kosher salt
2 cans tomato sauce
1 cup ketchup
1 tsp yellow mustard
2 tbsp Worcestershire sauce
1 tbsp brown sugar
2 cups frozen whole-kernel corn
1.5 cups shredded Colby-Jack cheese

Preheat the oven to 350°F (175°C).

Boil a large pot of salted water over high heat. Cook pasta al dente according to package directions, then drain.

In a large Dutch oven, heat oil on medium-high. Add beef and cook, breaking up with a spoon, until no longer pink, about 5 minutes.

Stir in onion, bell peppers, paprika, garlic powder, and salt. Cook, stirring occasionally, until vegetables are softened, around 4 minutes.

Add tomato sauce, ketchup, mustard, Worcestershire, brown sugar, and bring to a boil over medium-high heat. Reduce heat to medium and cook, stirring occasionally, until slightly thickened, about 5 minutes.

Remove from heat, mix in cooked pasta, corn, and 3/4 cup of the cheese.

Coat a 9x13-inch baking dish with cooking spray. Transfer the beef and pasta mixture to the dish. Sprinkle remaining 3/4 cup cheese on top.

Bake until heated through and cheese has melted, approximately 20 minutes.
