This comforting one-dish bake combines Italian sausage, rigatoni, and a trio of cheeses for a hearty family meal.
Preheat the oven to 175°C (350°F). Grease a large baking dish.
Bring a large pot of salted water to a boil. Cook rigatoni until tender yet firm, about 12 minutes. Drain and set aside.
In a large skillet, cook sausage and onion over medium heat until the sausage is cooked through and the onion is translucent, 5-7 minutes.
In a large bowl, mix spaghetti sauce, cottage cheese, 200 g mozzarella cheese, Parmesan cheese, eggs, parsley, Italian seasoning, basil, salt, and black pepper. Stir in the sausage mixture followed by the pasta until well combined.
Transfer the pasta mixture to the prepared baking dish. Cover and bake for 45 minutes. Uncover, top with remaining 200 g mozzarella cheese, and continue baking until the cheese is melted, about 15 minutes.
