Ingredients

2 heads cauliflower, cut into bites
olive oil cooking spray
0.25 cup olive oil
1 large onion, diced
4 cloves garlic, minced
6 cups water
salt, pepper

Soak cauli bites in a large bowl of salted water for 20 minutes. Drain well and pat dry.

Set an oven rack about 6 inches from the heat source and preheat the broiler's flames. Line a baking sheet with heavy-duty foil.

Arrange cauli bites on the prepared baking sheet; spray evenly with cooking spray.
