Ingredients

80/20 ground beef (1 1/2 lb)
6 oz chicken stuffing mix (e.g., Stovetop)
1/2 cup water
1 large egg, lightly beaten
1 1/2 tsp kosher salt
1 tsp poultry seasoning
1 cup ketchup
2 tb light brown sugar

Preheat the oven to 350°F (175°C). Line an 8- x 4-inch loaf pan with a double layer of aluminum foil, extending 3 inches on the long sides. Lightly coat with cooking spray and place on a baking sheet.

In a large bowl, combine beef, stuffing mix, water, egg, salt, poultry seasoning, and half of the ketchup until well mixed but not overmixed.

Transfer the mixture to the prepared loaf pan. Bake in the preheated oven until the top is golden and the sides are bubbly, about 35 minutes.

While the meatloaf bakes, whisk together brown sugar and remaining half of the ketchup in a small bowl until smooth.

Remove the meatloaf from the oven and spread the ketchup mixture over the top. Return to the oven and continue baking until a thermometer inserted into the thickest part of the meatloaf reads 71°C (160°F), 10 to 15 minutes.

Let the meatloaf rest for 5 minutes before using the foil overhang to carefully lift and transfer it onto a cutting board. Slice into 8 pieces.
