Ingredients

2 tbsp butter
1 lb andouille sausage, sliced
1 cup finely chopped celery
1 large sweet onion, finely chopped
1 large green bell pepper, finely chopped
3 cloves garlic, minced
1 lb skinless, boneless chicken thighs, cut into bite-sized pieces
1 (28 oz) can crushed tomatoes
1 tsp sweet paprika
1 tsp Creole seasoning
0.25 tsp cayenne pepper
2 cups chicken broth
1 (16 oz) package penne pasta
1 lb uncooked medium shrimp, peeled and deveined
0.5 cup heavy whipping cream
0.5 bunch fresh thyme, chopped
0.5 bunch fresh oregano, chopped
0.5 bunch fresh basil, chopped
0.25 cup sliced green onions
0.25 cup grated Parmesan cheese

In a large skillet, melt the butter over medium heat. Add the sausage and cook for 2 minutes. Then mix in the celery, onion, bell pepper, garlic; continue cooking until softened, approximately 7 minutes.

Add the chicken and cook until it's no longer pink inside and the juices run clear, about 5 to 7 minutes more. Subsequently, stir in the tomatoes, paprika, Creole seasoning, and cayenne pepper. Bring to a simmer and let it cook for 10 minutes.

Pour in the broth and bring back to a simmer. Add the penne and let it simmer for around 8 minutes. Then introduce the shrimp. Keep simmering and stirring frequently until the pasta is al dente and the shrimp is cooked through, roughly 7 minutes more.

Mix in the cream, followed by the thyme, oregano, and basil. Cook for an additional 3 to 5 minutes to let the flavors meld.

Finish by topping with green onions and Parmesan cheese just before serving.
