Ingredients

1 cup stone-ground grits
2 cups shredded sharp Cheddar cheese
3 tbsp butter
salt, black pepper to taste
1 lb shrimp, peeled and deveined
6 slices bacon, chopped
1 cup thinly sliced scallions
2 tbsp chopped fresh parsley
1 large clove garlic, minced

Directions

Cook grits in a pot following package instructions until tender. Remove from heat and mix in cheese, butter, salt, and pepper. Set aside covered.

Pat shrimp dry; rinse and set aside.

Cook bacon in a large skillet over medium-high heat, turning often, until browned (about 10 mins). Drain on paper towels; reserve 2 tbsp grease in the skillet.

Sauté shrimp in bacon grease over medium heat for about 2 mins or until opaque. Add bacon, scallions, parsley, garlic, and lemon juice. Cook until shrimp turn pink (around 3 mins).

Layer grits at the bottom of a casserole dish. Top with shrimp mixture; stir well. Bake at 190°C (375°F) for 20 mins or until heated through.
