Ingredients

1 tsp ground cinnamon
0.75 cup white sugar (150g)
5 large Rome Beauty apples
3 cups all-purpose flour (375g)
1 tsp salt
1 tbsp baking powder
4 eggs
2 cups white sugar (400g)
1 cup vegetable oil
0.25 cup orange juice
1 tbsp vanilla extract

Preheat your oven to 350°F (175°C). Grease and flour a 10-inch tube pan.

In a bowl, mix together the cinnamon, 0.75 cup sugar, and chopped apples. Set this mixture aside.

In another bowl, combine the flour, salt, and baking powder. With an electric mixer, beat the eggs and 2 cups of sugar until fluffy. Gradually pour in the flour mixture alternately with the oil. Mix in the orange juice and vanilla extract until the batter is smooth.

Pour half of the batter into the prepared pan. Layer half of the apple mixture on top, then pour the remaining batter over and finish by topping with the rest of the apples.

Bake for 1 hour and 30 minutes to 1 hour and 45 minutes until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
