Ingredients

6 slices bacon
1/2 cup unsalted butter, melted
1 can corn, drained
1 can creamed corn
3 green onions, thinly sliced
1 egg
1 cup sour cream
2 cups shredded Monterey Jack cheese
1 tsp Cajun seasoning

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a skillet, cook bacon over medium heat until crispy (about 7 minutes). Crumble and set aside. Reserve 2 tbsp bacon grease.

In a large bowl, combine the reserved bacon grease, melted butter, corn muffin mix, corn, creamed corn, green onions, egg, sour cream, shredded cheese, Cajun seasoning. Mix well and pour into the prepared baking dish.

Bake for about 45 minutes or until golden brown and slightly firm to touch in the center. Let it rest for 5 minutes before serving.
