Ingredients

1 cup cottage cheese
3 eggs
0.25 cup all-purpose flour
2 tablespoons melted butter
0.25 teaspoon salt
1 teaspoon butter for cooking, plus extra as needed
0.25 cup fresh blueberries

Strain cottage cheese in a sieve placed over a bowl, pressing it down occasionally until cottage cheese is dry and crumbly (about 1 hour).

In a medium bowl, beat eggs. Then mix in cottage cheese, flour, melted butter, and salt until blended.

Heat 1 teaspoon of butter in a frying pan over medium-high heat. For each pancake, drop a large spoonful of batter into the pan, and sprinkle a few blueberries on top. Cook until lightly golden on both sides (2 to 3 minutes per side). Add extra butter for cooking as needed.
