Ingredients

16 oz ziti pasta
1 tbsp olive oil
2 cups cubed butternut squash
1 tbsp minced garlic
2 tsp rubbed dried sage
1 tsp dried thyme
1.5 cups heavy cream
1 cup fresh spinach leaves
0.25 cup grated Parmesan cheese
3 tbsp chopped walnuts

Directions

Bring a large pot of salted water to a boil. Add pasta and cook, stirring occasionally, until al dente, about 10 minutes. Drain and set aside.

In a large skillet over medium heat, warm the olive oil. Sauté the squash until tender, around 10-15 minutes. Add garlic, sage, and thyme; cook until fragrant, about 1 minute.

Stir in the cream and spinach, bringing to a simmer. Combine 1/4 cup Parmesan cheese, salt, and pepper. Once simmering, add the ziti, tossing until evenly coated. Cook for an additional 1-3 minutes or until sauce thickens.

Remove from heat and divide among 8 bowls. Top each with walnuts and extra Parmesan to taste.
