1 spray avocado oil cooking spray (e.g., Pam®)
2 cups cubed cooked chicken breast
1.5 cups frozen mixed vegetables
1 (10.75 oz) can reduced-fat cream of chicken soup (e.g., Campbell's®)
1 cup low-fat Greek yogurt
salt and black pepper to taste
0.5 cup shredded fat-free Cheddar cheese (e.g., Kraft®)
24 crushed reduced-fat buttery round crackers (e.g., Ritz®)

Preheat the oven to 350°F (175°C). Grease an 8-inch baking dish using the avocado oil spray.

In a bowl, combine the chicken, vegetables, soup, yogurt, salt, and black pepper. Pour this mixture into the prepared baking dish. Top with Cheddar cheese followed by the crushed crackers. Lightly spritz the crackers with avocado oil.
