Ingredients

4 Tbsp butter
0.5 lb lean ground beef
0.75 cup chopped onion
0.75 cup shredded carrots
0.75 cup chopped celery
1 tsp dried basil
1 tsp dried parsley
4 cups cubed potatoes
3 cups chicken broth
0.25 cup all-purpose flour
1.5 cups milk
2 cups cubed Cheddar cheese
0.25 cup sour cream

In a large pot, melt 1 Tbsp butter over medium heat. Add the ground beef, onion, carrots, and celery; cook, stirring occasionally, until the beef is browned and crumbly, about 5 to 7 minutes.

Stir in basil and parsley. Add potatoes and broth to the pot, and bring to a boil. Reduce heat to low, and let it simmer until the potatoes are tender, about 10 to 12 minutes.

In a separate saucepan, melt the remaining 3 Tbsp butter over medium heat. Once melted, whisk in flour until smooth. Gradually pour in milk while continuing to whisk. Cook until the sauce thickens and smoothens out, about 1 minute.

Slowly stir the sauce into the potato mixture, making sure to constantly stir. Bring the soup back up to a boil, then reduce heat to low and gradually add the cheese, stirring until melted. Lastly, mix in the sour cream until heated through.
