Ingredients

2 (8 ounce) boneless, skinless chicken breasts
3/4 tsp kosher salt, divided
1/2 tsp black pepper, divided
1/3 cup all-purpose flour
2 large eggs, lightly beaten
1 1/2 cups seasoned panko (Japanese-style breadcrumbs)
1/2 oz Parmesan cheese, grated (about 1/4 cup)
2 tb olive oil
1/4 tsp crushed red pepper
1/4 tsp garlic powder
1 cup jarred marinara sauce
4 oz low-moisture, part-skim mozzarella cheese, shredded (about 1 cup)

Pat dry the chicken breasts and season both sides with half of the salt and a fourth of the black pepper.

Prepare three shallow dishes with flour, egg, and panko respectively. In the panko dish, mix Parmesan, oil, crushed red pepper, garlic powder, the remaining salt, and black pepper.

One at a time, dredge chicken in flour, then dip in egg and finally coat in the panko mixture. Place breaded chicken on a plate.

Preheat the air fryer to 400°F (200°C) for 2 minutes.

Cook the chicken in two batches in the air fryer basket, making sure they are in a single layer. Flip after 5 minutes and cook the other side until golden brown.

Top each chicken piece with marinara sauce and mozzarella cheese.

Arrange all four breasts in the air fryer basket and cook until the cheese is melted and brown, and the internal temperature reaches 73°C (165°F) with a thermometer, about 2 to 3 minutes.
