Ingredients

1 tbsp veg oil
0.5 cup diced onion
2 cups shredded cooked chicken
8 oz Neufchatel cheese, softened
1 (14 oz) can fire-roasted diced green chiles
1/2 cup chicken broth
1.5 tbsp taco seasoning mix
1/2 tsp salt
1/4 tsp black pepper
6 (10 in) flour tortillas
1 cup shredded Mexican cheese blend
avocado oil cooking spray

Preheat the air fryer to 200 C for 5 minutes following the manufacturer's instructions.

In a pan, heat oil over medium-low heat. Sauté onion until soft and translucent (4-6 minutes). Add in chicken, Neufchatel cheese, green chiles, broth, taco seasoning, salt, and pepper. Cook, stirring constantly, until everything is well combined.

Warm tortillas in a large skillet or directly on the gas stove grates until pliable. Place 1/3 cup of chicken mixture down the center of each tortilla, then top with 1 heaping tbsp of Mexican cheese. Fold the top and bottom parts of the tortilla over the filling, then roll each into a burrito shape.

Spray each chimichanga with cooking spray and place them in the air fryer basket. Air-fry for 4-6 minutes. Flip each chimichanga, respray with cooking spray, and continue air-frying until golden brown (2-4 minutes).
