Ingredients

2 medium sweet potatoes
2 cups white sugar
0.75 cup evaporated milk
0.5 cup unsalted butter, melted
0.25 cup dark corn syrup
2 large eggs, lightly beaten
3 tbsp all-purpose flour
2 tsp vanilla extract
1 tsp apple pie spice
0.25 tsp salt
1 (9 in) unbaked deep dish pie crust

Preheat the oven to 350°F (175°C). Place sweet potatoes on a foil-lined baking sheet.

Bake until the potatoes are tender and their skin loosens, 30 to 45 minutes. Let them cool, then peel.

Mash the sweet potatoes in a large bowl. Add sugar, evaporated milk, melted butter, corn syrup, beaten eggs, flour, vanilla extract, apple pie spice, and salt. Beat with an electric mixer until fluffy, about 5 minutes. Pour the batter into the pie crust. (Extra batter can be reserved for another use.)

Bake in the preheated oven until the pie is set and the crust is golden brown, 45 to 50 minutes.
