2 large onions, diced

5 lbs russet potatoes, peeled and shredded
1 (12 fl oz) can evaporated milk

In a Dutch oven over medium heat, cook the bacon until it begins to soften and render its grease. Add the diced onions and continue cooking until they become soft and translucent. Uncover the pan and keep cooking until the mixture caramelizes and turns deep golden brown.

Remove from heat and stir in the butter until melted. Then, mix in the shredded potatoes, followed by the evaporated milk and eggs. Stir well to combine all ingredients.
