Ingredients

2 1/2 lb beef chuck, cut into 2-inch cubes
2 tsp kosher salt
1 tsp freshly ground black pepper, plus more for serving
1 tbsp vegetable oil
2 large yellow onions, sliced
2 tbsp all-purpose flour
1 tsp garlic powder
1 rounded tablespoon beef bouillon paste
8 cups beef broth
12 oz large egg noodles
sliced green onions, for garnish (optional)

Toss beef with salt and pepper until evenly coated.

Heat vegetable oil in a large pot over high heat. Cook the beef in batches, browning on both sides; set aside.

Add more oil to the pot along with onions and a pinch of salt. Cook, stirring, until onions turn golden (about 5 mins).

Add flour and garlic powder. Cook, stirring, for 2 minutes. Add beef bouillon paste and beef broth. Bring to a boil.

Return reserved beef to the pot. Cover and simmer over low heat until meat is tender (about 2 hours).

Use a strainer to remove beef from the pot. Boil noodles in the liquid for about 30-60 seconds less than package directions. Add reserved beef back in, reduce heat, and let the noodles and beef cook together.

Check seasoning and adjust as needed before serving immediately, topped with more black pepper and green onions (if desired).
