Ingredients

1 tbsp ground cumin
1 tbsp chili powder
1 tbsp paprika
salt and pepper to taste
3 lbs baby back pork ribs
1 cup barbecue sauce

Prepare ingredients.

Set up the grill for low heat: gas on medium-low or charcoal on one side. Oil the grate.

In a small jar, mix together cumin, chili powder, paprika, salt, and pepper. Remove the membrane from the back of each rack and score it with a knife as much as possible.

Rub the spice mixture onto both sides of the ribs, but avoid over-rubbing to prevent burning.

Place a foil sheet on the lower grill rack to catch drippings. Lay ribs on the upper rack (away from coals for charcoal) and cook, lid closed, for about 1 hour or until the internal temperature reaches 63°C.
