Ingredients

2.5 cups chopped dried mixed fruit
1.5 cups hot black tea
2.5 cups flour
1 tsp ground cinnamon
0.5 tsp ground nutmeg
0.5 tsp baking soda
1 egg
1.5 cups sugar
0.25 cup lemon marmalade
1 tsp grated orange zest

Soak the dried fruit in hot tea for at least 2 hours or overnight.

Preheat your oven to 350°F (175°C) and generously grease a round 9-inch cake pan or 9x5-inch loaf pan.

In a bowl, mix the flour, cinnamon, nutmeg, and baking soda together. Set aside.

In another large bowl, lightly beat the egg. Add in the sugar, marmalade, orange zest, and tea-soaked fruit. Mix until well combined.

Gently fold the flour mixture into the wet ingredients until just combined. Pour this batter into your prepared pan.
