Ingredients

2 cups boiling water
0.5 cup dried cherries
2 large eggs
0.75 cup white sugar
1 (6 oz) container cherry vanilla-flavored yogurt
0.5 cup vegetable oil
0.25 cup melted butter, cooled
0.25 cup buttermilk
1 tsp vanilla extract
1.5 cups all-purpose flour
1 cup instant oatmeal
1 tsp baking powder
0.5 tsp baking soda
0.5 tsp salt
1 cup white chocolate baking chips, lightly dusted with flour

Directions

1

Steep dried cherries in boiling water for 15 minutes. Drain well.

2

Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

3

In a bowl, lightly beat eggs. Whisk in sugar, yogurt, oil, butter, buttermilk, and vanilla extract until combined.

4

In a larger bowl, whisk together flour, oatmeal, baking powder, baking soda, and salt. Add the egg mixture, white chocolate chips, and cherries; stir just until combined. Avoid overmixing.

5

Pour batter into the prepared pan. Bake for 45 minutes to 1 hour or until a toothpick inserted in the center comes out clean. Check at 35 minutes for different ovens. If browning occurs, cover the top with aluminum foil.

6

Let the loaf cool in the pan for 5 to 10 minutes before transferring it onto a wire rack to cool completely.
