Ingredients

4 chicken breasts, pounded thin and cut in half
1 cup white wine
1 cup pitted prunes
0.5 cup olive oil
0.5 cup red wine vinegar
0.5 cup capers with extra liquid
0.5 cup brown sugar
0.25 cup dried oregano
0.25 cup dried parsley
12 Spanish olives, halved
10 cloves garlic, crushed
6 bay leaves
Salt and black pepper to taste

In a large bowl, combine the chicken, white wine, prunes, olive oil, vinegar, capers with liquid, brown sugar, oregano, parsley, olives, garlic, bay leaves, salt, and black pepper.

Transfer the mixture into 2 resealable plastic bags; marinate in the refrigerator for 12 to 24 hours. Longer is better.

Preheat the oven to 325°F (165°C).

Pour the chicken and marinade into a 9x13-inch baking pan.

Bake in the preheated oven until the chicken is no longer pink in the center and juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165°F (74°C).
