Ingredients

6 ears corn, unhusked
6 tbsp unsalted butter, melted
0.25 cup crumbled cotija cheese
0.25 cup chopped fresh cilantro
2 limes, juiced

Directions

Preheat the oven to 175 °C (350°F) and prepare all ingredients.

Place the corn in husks directly on the oven rack and roast for 40-45 minutes until tender and cooked through.
