Ingredients

16 oz dry penne pasta
1 tsp olive oil
125 g prosciutto, chopped
2 cloves garlic, minced
0.5 tsp red pepper flakes
2 x 16 oz cans whole peeled tomatoes
1 cup heavy cream
0.5 cup vodka
1 cup grated Parmesan cheese
0.5 cup fresh basil leaves, chopped
salt to taste

Directions

Boil a large pot of salted water and cook the penne for about 11 minutes until tender yet firm; drain and set aside.

In a large skillet or wok, heat the olive oil on medium and sauté prosciutto, garlic, and red pepper flakes for 1 minute.

Combine the tomatoes, stir, and cook for 3 minutes.

Pour in the cream and vodka; simmer until the sauce thickens (about 15 minutes).

When the sauce is ready, mix in Parmesan and basil. Season with salt to taste.
