Ingredients

1 pack (16 oz) frozen French fries
2 tbsp vegetable oil
1 lb beef tri-tip, sliced thinly
salt, pepper to taste
1 large onion, cut into strips
3 large tomatoes, peeled, seeded, and cut into strips
1 yellow chili pepper (preferably Peruvian aji amarillo)
1/4 cup distilled white vinegar
1 dash soy sauce to taste
2 tbsp chopped fresh parsley

Preheat the oven to 425°F (220°C).

On a baking sheet, arrange French fries in a single layer. Bake until golden, for 22-24 minutes.

While fries cook, heat 2 tbsp oil in a large pan over medium-high<dummy00025>. Season beef with salt and pepper. Cook and stir beef until just cooked and juices release. Set beef aside with a slotted spoon.

Cook onions in the remaining beef drippings until translucent, for 3-4 minutes. Add tomato and aji amarillo; cook until tomato softens. Pour in vinegar and soy sauce.

Combine French fries, beef, and pan sauce. Cover and simmer until beef is cooked through, about 3 minutes. Season with salt and pepper; garnish with parsley before serving.
