Ingredients

8 potatoes, peeled and quartered
2 Kielbasa sausages, cut into 2-inch pieces
1 onion, chopped
1 (8 oz) package baby carrots
4 cloves garlic, crushed
salt and ground black pepper, to taste
3 tbsp olive oil

Directions

Preheat the oven to 175°C (350°F).

In a roasting pan, combine potatoes, Kielbasa, onion, baby carrots, and garlic. Season with salt and pepper. Toss with olive oil.

Cover the baking dish with aluminum foil.

Bake in the preheated oven for 1 hour. Remove foil and continue baking until potatoes are fully cooked, about 30 minutes more.
