Ingredients

1/3 cup oyster sauce
1/3 cup sherry
2 tsp Asian (toasted) sesame oil
1 tsp soy sauce
1 tsp white sugar
1 tsp cornstarch
680 g beef round steak, cut into 1/8-inch thick strips
3 Tbsp vegetable oil
1 thin slice of fresh ginger root
1 clove garlic, peeled and smashed
1 kg broccoli, cut into florets

Directions

In a bowl, whisk together oyster sauce, sherry, sesame oil, soy sauce, sugar, and cornstarch until the sugar dissolves.

Place steak in a shallow dish. Pour the oyster sauce mixture over it, stir to coat, cover, and marinate in the fridge for at least 30 minutes.

In a wok or large skillet, heat 2 tbsp of vegetable oil over medium-high heat. Add ginger and garlic; let them sizzle for about 1 minute to flavor the oil before removing and discarding them.

Add broccoli florets to the wok. Stir and cook until they're bright green and tender, about 5 to 7 minutes. Remove broccoli and set it aside.

If needed, add more oil to the wok, then add beef with its marinade. Stir-fry until the sauce thickens, becomes shiny, and the meat is no longer pink, approximately 5 minutes.

Return the broccoli to the wok, stirring until it's heated through, around 3 minutes.
