Ingredients

5 lbs Granny Smith apples, cored and cut into 1-inch pieces
1.5 cups white sugar
0.5 cup brown sugar
1 tsp salt
2 tsp ground cinnamon
0.125 tsp freshly grated nutmeg
0.5 tsp ground allspice
0.25 cup apple cider vinegar
1 splash water

Place the apple pieces in a large slow cooker. Add white sugar, brown sugar, salt, cinnamon, nutmeg, allspice, and vinegar. Pour in the water and mix well.

Cover and cook on High until apples soften slightly and release juices, 1 to 2 hours. Then reduce heat to Low, cook uncovered for 5 to 6 hours more until all apple flesh dissolves. Stir occasionally.

Use an immersion blender to puree the mixture until smooth. Continue cooking, stirring occasionally, until darkened and thickened, about 4 hours more. Strain the apple butter if desired. Store in a glass container in the fridge until ready to serve.
