Ingredients

3 tbsp vegetable oil
1.5 lb boneless lean beef, diced
2 tsp garlic powder
1 tsp salt
1 tsp ground black pepper
6 cups water
3 (10.5 oz) cans beef broth
6 medium carrots, chopped
6 green onions, chopped
4 stalks celery, chopped
1 cup barley
0.5 cup fresh parsley, chopped
1 tsp dried thyme

Directions

1

In a skillet, heat oil over medium flame. Add beef and cook until browned, roughly 5 mins. Mix in garlic powder, salt, and pepper, then relocate the mixture to a slow cooker.

2

Add some water to the skillet. Simmer and scrape any caramelized bits using a spoon. Incorporate the liquid and bits into the slow cooker.

3

Combine remaining water, beef broth, carrots, green onions, celery, barley, and parsley in the slow cooker. Cover and cook on Low for 6 to 8 hours until veggies and barley tenderize.

4

Include thyme just before serving.
