Ingredients

75g light brown sugar
30g rice vinegar
30g fish sauce
4 cloves finely minced garlic
2 tbsp finely grated fresh ginger
2 tsp hot pepper sauce
1 tsp soy sauce
900g boneless, skinless chicken thighs, cut into 1-inch pieces
1 tbsp vegetable oil
100g sliced seeded jalapeno peppers
100g sliced seeded mild red chilies or bell peppers
100g roasted peanuts
50g chopped green onions plus more for garnish
25g chopped fresh cilantro leaves

Directions

In a bowl, whisk together brown sugar, vinegar, fish sauce, garlic, ginger, hot pepper sauce and soy sauce.

Place chicken in a separate bowl. Pour in 1/2 cup of the brown sugar sauce; toss until chicken is well coated. Set aside for 15 minutes.

In a heavy skillet over high heat, heat vegetable oil until it starts to smoke. Add chicken in a single layer and cook, stirring often, until chicken begins to caramelize and turns deep brown (8-10 minutes). Reduce the heat to medium, then add jalapeños, red peppers, peanuts and half of the green onions. Cook and stir for 1 minute. Pour in remaining brown sugar sauce and simmer until heated through (1-2 minutes). Remove skillet from heat.

Stir in cilantro. Serve the chicken mixture over hot cooked rice. Garnish with extra chopped green onions.
