Ingredients

1 lb Italian sausage
1 clove garlic, minced
2 (14 oz) cans beef broth
1 (14.5 oz) can Italian-style stewed tomatoes
1 cup sliced carrots
0.25 tsp salt
0.25 tsp ground black pepper
1 (14.5 oz) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach - packed, rinsed and torn

Prepare all ingredients.

In a large pot or Dutch oven over medium-high heat, cook the sausage and garlic until browned, for 5 to 7 minutes.

Stir in broth, tomatoes, carrots, salt, and pepper. Reduce heat to medium-low, cover, and let it simmer for 15 minutes.

Add beans with their liquid and zucchini; cover and simmer until the zucchini is tender, around another 15 minutes.

Remove the soup from heat, then mix in spinach. Replace the lid and allow spinach to wilt for a few moments.
