Ingredients

2 lbs russet potatoes, peeled and cut into 1/4-inch fries
2 tsp vegetable oil
1 1/2 tsp Sriracha
1/2 cup shredded Cheddar cheese
2 tbsp real bacon bits
2 green onions, chopped

Prep all ingredients.

Soak the fries in cold water for 20 mins.

Set oven to 400°F (200°C) and line a large baking sheet with foil.

Drain potatoes, rinse, then dry in a colander. Return to the bowl.

Mix oil and Sriracha in a small bowl until smooth; toss fries to coat.

Arrange fries on the baking sheet in a single layer. Bake for 20 mins., flip fries, and bake for another 10 mins.
