Ingredients

2 quarts apple cider
1 tsp garlic powder
1 tsp salt
0.5 tsp paprika
0.5 tsp ground black pepper
2 racks baby back ribs, cut into individual ribs
2 (12 oz) bottles BBQ sauce
6 cloves garlic, coarsely chopped
2 tbsp brown sugar
1 tbsp chili garlic sauce

Pour apple cider into an 8-qt multi-functional electric pressure cooker (like Instant Pot) up to 1/2 inch below the rack line. Stir in garlic powder, salt, paprika, and black pepper. Place rack into pot; heat cider completely. Arrange ribs on rack.

Close and lock the lid. Cook at high pressure for 27 mins according to manufacturer's instructions. Allow 10-15 mins for pressure to build.

Preheat oven to 350°F (175°C). Line a baking sheet with a roasting rack.

Blend 2 cups barbecue sauce, garlic, brown sugar, and chili garlic sauce in a large cup until smooth. Mix with remaining barbecue sauce in a large bowl; set aside to reach room temperature

Release pressure carefully using the quick-release method (about 5 mins). Unlock lid.

Dip ribs into barbecue sauce, place on roasting rack (no touching), and brush extra sauce on top for stickiness.

Bake in preheated oven until sauce is set, 15-20 mins.
