Ingredients

0.75 cup white sugar
0.75 cup brown sugar
0.25 cup seasoned salt
2 tablespoons paprika
2 tablespoons ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper
4 racks pork spareribs

In a container with a lid, combine white sugar, brown sugar, seasoned salt, paprika, black pepper, garlic powder, onion powder, and cayenne pepper. Shake until evenly mixed.

Rub both sides of each rib rack generously with the spice mix.

Preheat an outdoor grill for medium heat; oil the grate lightly.

Place one rib rack, meaty-side down, at the center of the main grill rack. Cook for 5 minutes before moving it to the far side of the top grill rack, meaty-side up. Repeat with remaining rib racks.

Arrange rib racks on the top grill shelf with meaty sides facing out and stacked one in front of the other at an angle. Turn off heat directly under the ribs; turn on low heat beneath the ribs. Close the grill lid, and cook for 30 minutes.

Flip ribs so that the side closest to the flame becomes the furthest side, and the meaty side stays facing forward. The front rib rack now goes to the back. Keep cooking until the outsides are crispy and the meat is tender – about 5 hours, flipping every 30 minutes.

Slice ribs into bite-sized pieces.
