Preheat the oven to 325°F (165°C). Lightly dust an oven bag with flour.
In a small bowl, mix together the brown sugar, applesauce, and ginger.
Place the pork roast inside the prepared bag; pour the sugar mixture over the roast. Seal the bag, then put it in a roasting pan. Create a few small slits on top of the bag.
Cook until an instant-read thermometer inserted into the center reads 145°F (63°C), around 1 hour.
