Ingredients

1 cup unsalted butter + more for greasing
4 1/2 cups tart apples, chopped
1 tbsp fresh lemon juice
1 cup light brown sugar
1 1/2 tsp ground cinnamon
3/4 cup white sugar
1 tsp salt
1/2 tsp ground nutmeg
3 eggs, room temp
2 tsp vanilla extract
1 cup full fat sour cream, room temp
1/3 cup apple cider
2 cups all-purpose flour
1 tsp baking powder
1/4 tsp baking soda

Melt 1 cup unsalted butter in a light-colored medium pan over medium-low heat until browned (6-8 mins). Transfer to a large bowl and let cool 15 minutes.

Toss apples, lemon juice, 1/2 cup brown sugar, and 1 tsp cinnamon in a large bowl. Set aside.

Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.

To the cooled brown butter, add 3/4 cup white sugar, remaining 1/2 cup brown sugar, salt, 1/2 tsp cinnamon, nutmeg, eggs, vanilla, sour cream, and apple cider. Whisk until combined. Add flour, baking powder, and baking soda; stir until smooth.

Pour batter into prepared dish, smoothing top. Scatter apple mixture over batter. Bake until a toothpick inserted into the center comes out mostly clean (55-65 mins). Let cake cool 15-20 minutes.

Meanwhile, make icing. In a bowl, whisk together powdered sugar, salt, vanilla, and heavy cream until smooth and pourable. Adjust heavy cream as needed. Pour icing over warm cake, spreading evenly.
