Ingredients

1 cup hot brewed tea
0.75 cup dried currants
0.75 cup golden raisins
0.75 cup demerara sugar
1.25 cups self-rising flour
1 egg, beaten

Soak currants and raisins in hot tea for 8 hours to overnight in a bowl.

Preheat the oven to 350°F (175°C) and grease and line an 2-pound loaf pan.

Mix demerara sugar into the tea, fruit mixture until completely dissolved. Then stir in flour and egg until well combined into a batter. Spread the batter evenly in the prepared pan.

Bake for about 40 minutes or until golden-brown and a toothpick inserted in the center comes out clean. Let it cool briefly in the pan before transferring to a rack to cool completely.
