Ingredients

6 Tbsp margarine, divided
1 small onion, chopped
1 (30 oz) package frozen shredded hash brown potatoes, thawed
Ground black pepper, to taste
2 cups shredded sharp Cheddar cheese
1 (10.5 oz) can condensed cream of chicken soup
1 (10.5 oz) can condensed cream of celery soup
1 (8 oz) container sour cream
0.5 lb diced ham
2 cups cornflakes
2 Tbsp margarine

Directions

Preheat the oven to 350°F (175°C).

In a Dutch oven, melt 4 Tbsp margarine over medium heat. Add onion; sauté until translucent, about 5 minutes. Stir in remaining 2 Tbsp margarine until melted.

Combine hash brown potatoes and black pepper. Mix in Cheddar cheese, condensed soups, sour cream, and ham. Transfer to a large baking dish.

Toss cornflakes with 2 Tbsp melted margarine until coated. Sprinkle over the potato casserole.
