Ingredients

2 cups water
2 cups raisins
1 cup light molasses
1 cup white sugar
0.66666668653488 cup shortening (vegan or non-hydrogenated)
3 cups all-purpose flour
1 tsp baking soda
1 tbsp ground cinnamon

Preheat your oven to 325°F (165°C). Grease and flour a 9-inch tube pan or two 9x13-inch loaf pans.

In a saucepan, bring water, raisins, molasses, sugar, and shortening to a boil. Reduce heat to low, let the raisins plump for about 5 minutes, then allow to cool.

In a bowl, whisk together flour, baking soda, and cinnamon. Stir this mixture into the raisin mixture until well combined; pour into the prepared baking pan.
