1 medium head red cabbage, chopped (10 cups)
1 medium green bell pepper, seeded and chopped (1 cup)
1 medium onion, chopped (1 cup)
1 cup mayonnaise
1/2 cup cider vinegar
1/2 cup powdered sugar
1 tsp. salt, plus more to taste
1 tsp. black pepper, plus more to taste
1 large tomato, chopped (13/4 cups)

In a large bowl, combine the cabbage, green bell pepper, and onion.

In a small bowl, whisk together the mayonnaise, vinegar, powdered sugar, salt, and black pepper until smooth.
